Rich Creamy Chocolate Pudding (Printable Version)

Velvety smooth dark chocolate pudding, rich and creamy served chilled in elegant individual glasses.

# Ingredient List:

→ Dairy

01 - 2 cups whole milk
02 - 1/2 cup heavy cream
03 - 2 tbsp unsalted butter

→ Dry Ingredients

04 - 1/2 cup granulated sugar
05 - 1/4 cup unsweetened cocoa powder
06 - 3 tbsp cornstarch
07 - 1/4 tsp salt

→ Chocolate

08 - 3.5 oz dark chocolate (60-70% cocoa), finely chopped

→ Flavoring

09 - 1 tsp pure vanilla extract

# How to Make It:

01 - Whisk together the sugar, cocoa powder, cornstarch, and salt in a medium saucepan until well blended.
02 - Gradually whisk in the milk and cream until the mixture is completely smooth and no lumps remain.
03 - Place the saucepan over medium heat. Cook, whisking constantly, until the mixture thickens and begins to bubble, approximately 5 to 7 minutes.
04 - Remove from heat immediately. Add the chopped chocolate and butter, whisking vigorously until completely melted and the pudding becomes silky smooth.
05 - Stir in the vanilla extract until fully incorporated.
06 - Pour the pudding evenly into individual serving glasses or ramekins. Press plastic wrap directly onto the surface to prevent skin formation.
07 - Refrigerate for at least 2 hours until the pudding is fully set and chilled through.
08 - Serve chilled with optional garnishes such as whipped cream, chocolate shavings, or fresh berries.

# Expert Tips:

01 -
  • Its faster than driving to the store for pudding cups and infinitely more delicious
  • The texture is impossibly smooth, like something youd order at a fancy restaurant but made in your own kitchen
  • You probably have everything you need right now, waiting in your pantry and fridge
02 -
  • Never stop whisking while it heats or you will end up with lumpy scrambled milk instead of smooth pudding
  • The plastic wrap trick is not optional, it is the difference between pudding with a smooth surface and one with that strange skin some people love but most do not
03 -
  • Room temperature chocolate incorporates more smoothly than cold chocolate straight from the fridge
  • If you do end up with a few lumps, press the warm pudding through a fine mesh strainer before chilling and nobody will ever know
